Has anyone else gotten into sourdough baking?

I've been experimenting with sourdough starters for about three months now, and I'm absolutely hooked. There's something oddly satisfying about feeding your starter daily and watching it bubble up, plus the flavor you get from a proper fermentation is miles ahead of regular bread. I'm curious if anyone else here has tried it – what's been your biggest challenge? Mine is definitely nailing the scoring technique to get that perfect ear on top!

I've been making sourdough for about a year now and it's honestly become such a satisfying hobby - there's something rewarding about keeping a starter alive and watching the dough transform. The learning curve is steeper than regular bread, but once you get the hang of the timing and fermentation, the results are so much better than anything from a bakery.
